Chef Luís Mateus

The chef

One pair of hands, twenty-five plates.

I am Luís Mateus. I cook out of Peniche, on the Silver Coast, and I work in other people's kitchens — holiday villas, family homes, surf houses rented by the week.

What I do is restaurant cooking without the restaurant. Portuguese ingredients bought the same morning — octopus, Atlantic fish, Iberian pork, suckling pig — finished with the technique I learned in professional kitchens: cooked at low temperature, espumas, gels, a plate put together thirty seconds before it reaches you.

I cook and I serve every plate myself. That is the reason I stop at twenty-five guests. Past that I would be running a kitchen instead of cooking a dinner, and the whole point is that you can hear the pan from the table.

What would you like me to cook?

Three services. Choose one, answer a few questions, and you leave with your menu and your price.

Served to share, instead

Everything above is plated and served course by course — that is how I work, and it is what most tables want. But if your evening calls for fire, a paella and a table loaded all at once, say so and we do that instead.

Where I cook

A private chef who comes to you

I work out of Peniche, on the Silver Coast, and I cook in private homes, holiday villas, surf houses and rented quintas across the centre and west of Portugal. If you are looking for a private chef at home for a dinner, a birthday, an anniversary, a bachelor or bachelorette party, a corporate table or a whole villa stay, this is the area I cover.

Travel included

within 50 km of Peniche

Peniche · Baleal · Ferrel · Consolação · Óbidos · Foz do Arelho · Caldas da Rainha · São Martinho do Porto · Nazaré · Alcobaça · Bombarral · Lourinhã · Areia Branca · Santa Cruz · Torres Vedras

This is my home coast. Surf houses and villas here are rented by the week all year, and a chef at the table on one of those nights is what turns a holiday into something people talk about afterwards.

I also travel to

€0.36 per km beyond the first 50

Lisboa · Cascais · Estoril · Sintra · Ericeira · Mafra · Oeiras · Almada · Sesimbra · Setúbal · Comporta · Melides · Santarém · Leiria · Fátima

I tell you the exact travel figure before you decide anything, so there is never a number on the final bill you had not already seen.

What people come to me for

  • Private chef at home — a plated dinner in your own kitchen and dining room, with nothing to prepare and nothing to clean up.
  • Private chef in a holiday villa — one evening, or every meal of the stay, with a new menu each day.
  • Birthdays and anniversaries — a tasting menu for the table instead of a restaurant booking nobody remembers.
  • Bachelor and bachelorette parties — a house full of friends, a long table, and a dinner nobody has to organise or drive home from.
  • Corporate and client dinners — no neighbouring tables, no waiting for the bill, and the conversation never stops.
  • Group experiences — paella, fire and sharing tables, when the evening should be loud and generous instead of formal.

Good to know

Everything guests ask

Are the ingredients included?+

Yes, for dinners and celebrations — the price per person covers all the food, bought fresh that morning, plus the couvert. Drinks and wine are never included.

Multi-day stays work differently. There the day rate is for my work, and the shopping is yours — I buy it and hand you the receipts, or you have the fridge filled before I arrive. Whichever you prefer.

How many guests do you cook for?+

From 7 guests, up to 25. Twenty is where the evening sits best — one table, every plate out at the right moment. Above twenty-five I would not be serving you properly, so I say no rather than do it badly.

Do you come to where we are?+

I work out of Peniche, and travel within 50 km is included — the whole Silver Coast, Óbidos, Nazaré, Caldas, Lourinhã. Beyond that I still come: Lisbon, Cascais, Sintra, Comporta. The extra distance is simply €0.36 per km, and I tell you the exact figure before you decide.

Do you bring plates and glasses?+

We talk about it first. I ask what the house has, and then I decide — you never have to work it out yourself.

I always bring the table dressing: napkins, cutlery and the decoration. For a large table with four or five courses I bring the plates too, because twenty matching plates is not something most houses own. Smaller dinners are usually plated on what is already there.

What time do you arrive, and when does it end?+

Two hours before service, with the shopping already done. Dinner runs two to three hours. I leave when the dinner ends — the kitchen clean, as I found it. Nobody is rushed and nobody is watching the clock.

Who serves the table?+

I do — I cook and I serve every plate, so the food reaches the table at the moment it should. From about eight to ten guests I bring one assistant, so that nothing waits.

What do you need from me before?+

Two things only.

Before: the final number of guests, any allergies, the menu closed about a week ahead, and photos — the kitchen, the counter, and the table you will eat at. Those photos are how I know what to bring.

On the day: empty space in the fridge and a clear counter to work on. This is the one thing I ask for properly, because it is often forgotten, and a full fridge on arrival costs the evening an hour.

Is there a deposit? What if I cancel?+

25% confirms the date, the rest is settled on the day. The full cancellation terms are written into the booking confirmation you receive, so there is nothing to guess at.

Do you need a professional kitchen?+

No. An oven, a hob and some counter space are enough — I bring whatever else the menu needs.

How far in advance should I book?+

Two weeks is comfortable. Summer weekends in Comporta and Cascais go earlier. For a closer date, ask anyway.

We are a bachelor party. Does this work for us?+

It is one of the things I do most. A house full of friends, a long table, and a dinner nobody has to organise, book or drive home from.

Groups usually split one of two ways: a plated tasting menu when they want the evening to feel like an occasion, or fire and grill when they want it loud and generous. Tell me which sounds more like your group and I will build it either way.
